The chocolate drizzle over the top makes this feel more like a dessert than breakfast - but that's never been a bad thing 😉 Plus, it's dairy-free and ready in just 15 minutes!

Once December 1st hits, bring on all the chocolate and peppermint! It's the perfect flavor combination to get you in the jolly spirit. If you're not ready to get your bake on yet, start with this French Toast. It's fluffy, full of minty flavor, and the chocolate drizzle sweetens the dish without overpowering it. Your family will be begging for this for breakfast every day in December! Luckily for you, it's super easy and can be whipped up in minutes!

ingredients
- Challah bread: Challah bread is very spongy and rich. It's similar to brioche but is made with oil instead of butter, keeping it dairy-free. You can sub with any type of bread you have at home but you'll need more bread if it's thin (like sandwich bread) or some sweetener if you're using sourdough.
- Almond milk: Any nut milk will work!
- Eggs
- Peppermint extract
- Salt: A pinch is needed to bring out the flavors.
- Avocado oil: To keep it dairy-free, cook it in oil or dairy-free butter. However, my favorite breakfast cooking medium is vanilla ghee.
- Maple syrup: To serve with of course!

- Chocolate: Brownie points for using mint chocolate! Otherwise, any kind of chocolate chips or chunks will work.
- Coconut oil
the steps to this dish
Start by making the custard. Whisk the almond milk, eggs, peppermint extract, and salt until frothy and homogenous. Set aside. Next, heat the oil in a skillet over medium-high heat. Dunk a slice of bread into the custard, making sure each side is soaked for a couple seconds. Place into the hot ghee and fry both sides until golden brown, about 2-3 minutes. Add a new pat of ghee for each new slice of bread, continuing until the custard is used up.
Then, add the chocolate and coconut oil to a microwave-safe bowl. Microwave in 10-15 second intervals, whisking each time, until completely melted and smooth. Drizzle over the French toast.
Serve the French toast with maple syrup. For some crunch, top with crushed candy canes!

Ingredients
- ½ loaf challah bread cut into ½" thick slices
- ⅔ cup almond milk
- 2 eggs
- ½ teaspoon peppermint extract
- Pinch of salt
- Avocado oil for cooking
- Maple syrup for topping
Chocolate Drizzle
- 1 oz chocolate I used Hu Chocolate
- ½ teaspoon coconut oil
Instructions
- Make the custard: whisk together the almond milk, eggs, peppermint extract, and salt until homogenous.
- Heat the oil in a skillet over medium-high heat. Dunk the bread into the custard for a few seconds on both sides. Place into the skillet and fry for 2-3 minutes each side or until golden brown. Repeat for each slice, adding a little bit of oil for each slice.
- Add the chocolate and coconut oil to a microwave safe bowl. Microwave in 10-15 second intervals until melted and smooth.
- Drizzle the chocolate over the French toast and serve with maple syrup.
