Russet potatoes Butter Garlic & onion powder Green onion/chives Shredded cheese Flour Egg Panko breadcrumbs Oil spray

Ingredients

First, wash potatoes and pierce all over with a fork. Air fry whole at 400F for 45-60 minutes or until fork-tender.

Carefully cut "baked" potatoes in half and spoon flesh into large bowl.

Add butter, salt, pepper, garlic & onion powder, & green onion/chives. Mash until just incorporated.

Lightly stir in cheese.

Form into balls, cover with plastic wrap, and let set in fridge for 15 minutes.

Set up dredging station. One bowl with flour. Second bowl with whisked egg and splash of water. Third bowl with Panko breadcrumbs.

Dredge potato balls in flour, then egg, then breadcrumbs. Spray with oil and air fry at 400F for 5-7 minutes until golden.
