Pork shoulder or butt Dried parsley, oregano, thyme, & bay leaf Onion, carrots, celery, & garlic Red wine Canned tomato sauce

Ingredients

First, season pork with parsley, thyme, oregano, salt, and pepper. Then turn on the Sauté mode on the Instant Pot and sear each side for 2-3 minutes. Set aside.

Add the onion, carrots, and celery. Sauté for 2 minutes, then stir in garlic for 30 seconds.

Add red wine and scrape any browned bits on the bottom. Let reduce for 3-4 minutes, then turn off the Instant Pot.

Add the tomato sauce, bay leaf, and pork back in. Pressure cook on high for 40 minutes, then let release naturally for 10 minutes.

Shred the pork and option to Sauté the sauce until thickened.

Serve over pasta, mashed potatoes, polenta, or with bread and enjoy!
