Acorn squash Chicken sausage Onion, celery, & garlic Apple Thyme Walnuts Feta cheese

Ingredients

First, cut the acorn squash in half & de-seed it. Roast in a 350F oven cut-side down for 25-35 minutes.

Meanwhile, sear cubed sausage in a skillet for 2-3 minutes.

Add onion, celery, & apple. Cook for another 2-3 minutes.

Stir in garlic & thyme.

Turn off the heat & add the walnuts & feta cheese. Season to taste.

Stuff the acorn squash with the sausage mixture. Bake again for another 15-20 minutes.
