This Sweet Potato Turkey Hash is an easy, healthy breakfast that’s packed with flavor and protein to keep you full all morning! With hearty sweet potatoes, savory ground turkey, and warm spices, it’s a one-pan meal that comes together in just 40 minutes. Top it with eggs, avocado, or fresh herbs for a delicious, wholesome start to your day!
Heat a large pan over medium-high heat and drizzle in oil. When hot, add chili powder and sage, stirring to let bloom for 30 seconds. Then quickly add the turkey, 1 tsp kosher salt, and ½ tsp pepper. Break up the turkey into small crumbles and cook for 1-2 minutes.
When the turkey is still pink, add in the onion and bell pepper. Cook all together, continuing to crumble up the turkey, for 2-4 minutes until veggies start to soften. Use a slotted spoon to transfer the whole mixture to a large bowl and set aside. There should be some liquid remaining in the pan - do NOT drain.
Turn the heat down to medium. To the same pan, add sweet potato, garlic powder, chicken broth, and 1 tsp salt. Cover with a lid and let cook for 4-5 minutes, quickly stirring halfway.
Remove the lid and let cook for another 2-3 minutes until dry and the sweet potatoes are tender. If they need more time, add another 1 tablespoon broth and cook covered until softened, repeating as needed.
Return the turkey and veggie mixture back in. Mix all together and season to taste. Finish with your choice of toppings and serve warm.
Notes
To finishwith eggs: Make 4 wells in the hash, crack eggs in, and cover with a lid to cook for 3-5 minutes or until cooked to your desired doneness. Alternatively, serve it with eggs on the side - hard-boiled, fried, scrambled, or poached eggs are all great!
Kosher salt: The salt amounts listed in this recipe are for Diamond Crystal kosher salt. If using Morton kosher salt, sea salt, or Himalayan pink salt, reduce by half. If using table salt, reduce the salt by ¼.
Substitutions:
Instead of ground turkey, you could use any type of meat you'd like. Breakfast sausage, ground beef/pork/chicken, or chorizo are easy substitutes. Or you could even use leftover turkey from Thanksgiving!
Replace sweet potatoes with regular potatoes if you'd like, but keep in mind that they'll cook faster.
Want to keep it vegetarian? Skip the meat and bulk it up with your favorite vegetables like kale, shredded brussels sprouts, zucchini, spinach, or cauliflower.
