    • Sweet potatoes: Hearty, healthy, and delicious! I use the orange-fleshed variety, often called yams, but any type of sweet or regular potatoes would work here.
    • Onion and bell pepper: Classic breakfast hash ingredients. Adds more flavor, texture, and nutrition but feel free to use any vegetables you'd like.
    • Chicken broth: To lightly steam the sweet potatoes. This helps to cook the potatoes faster while infusing flavor. I cook exclusively with bone broth. It's rich in collagen, supports digestion, and has anti-inflammatory components. Use low or no-sodium broth whenever possible.
    • Spices: Chili powder, sage, and garlic powder adds warmth, depth, and smokiness to the Sweet Potato Turkey Hash.
    • Cooking oil: Avocado oil is my favorite oil to cook, fry, and sauté with because of its high smoke point (500°F) and neutral flavor.
    • Kosher salt: The salt amounts listed in this recipe are for Diamond Crystal kosher salt. If using Morton kosher salt, sea salt, or Himalayan pink salt, reduce by half. If using table salt, reduce the salt by ¼.
    • Optional toppings: lime juice, fresh herbs, avocado, hot sauce, eggs.

    • Instead of ground turkey, you could use any type of meat you'd like! Turkey or breakfast sausage, ground beef or chicken, or chorizo are easy substitutes. Or you could even use leftover turkey from Thanksgiving!
    • Want to keep it vegetarian? Skip the meat and bulk the hash up with your favorite vegetables like kale, shredded brussels sprouts, zucchini, spinach, or cauliflower.
    • If you'd like to finish this Sweet Potato Turkey Hash with eggs, make 4 wells in the hash, crack eggs in, and cover with a lid to cook for 3-5 minutes or until cooked to your desired doneness. Alternatively, serve it with eggs on the side - hard-boiled, fried, scrambled, or poached eggs are all great!

    In a cast iron pan, bloom spices and cook ground turkey.

    STEP ONE: First, heat oil in a large pan and add chili powder and sage. Allow to toast in the oil for about 30 seconds while stirrring.

    STEP TWO: Then add the ground turkey, salt, and pepper. Crumble into small pieces and cook for a couple minutes.

    STEP THREE: While the turkey is still a little raw, add the diced onion and bell pepper. Continue cooking for about 3-4 more minutes or until onion starts to become translucent.

    Transfer the turkey and veggie mixture to a large bowl and set aside. Keep any remaining liquid in the pan.

    STEP FOUR: Next, add sweet potato, garlic powder, chicken broth, and salt to the same pan. Cover with a lid and cook over medium heat for about 5 minutes. Stir halfway but try to minimize how much steam escapes.

    After 5 minutes, remove the lid and continue cooking uncovered, stirring occasionally, until potatoes are fork tender. If dry, add more broth as needed.

    STEP FIVE: Add the turkey and veggies back in. Stir to combine and season to taste. Serve with any toppings, if desired.

    • Bloom the spices first. Heating the chili powder and sage in oil first releases their essential oils and enhances its flavor. Since ground turkey can be lean with less flavor, this simple step makes a big difference!

    Freezing: After cooling the breakfast hash to room temperature, divide the hash into individual servings and store in freezer-safe containers or resealable freezer bags, removing as much air as possible. Store in the freezer for up to 2-3 months.

    Reheating: Reheat in 1-2 minute intervals in the microwave, stirring halfway. Alternatively, heat in a pan over medium heat with a splash of broth if needed.
    If frozen, thaw overnight first or add a couple minutes to the reheating time.

    Ingredients
     
     

    • 2 tablespoon cooking oil
    • 2 teaspoon chili powder
    • 1 teaspoon dried sage
    • 1 lb ground turkey
    • ½ onion diced; about ¾ cup
    • 1 bell pepper diced
    • 2-3 sweet potatoes peeled and diced into ½ inch cubes; about 3 cups or ¾ lb
    • ½ teaspoon garlic powder
    • 2 tablespoon unsalted or low sodium chicken broth plus more if needed
    • Kosher salt and pepper Diamond Crystal

    Optional Toppings

    • Lime highly recommend
    • Cilantro
    • Green onion thinly sliced
    • Avocado or guacamole
    • Eggs

    Instructions
     

    • Heat a large pan over medium-high heat and drizzle in oil. When hot, add chili powder and sage, stirring to let bloom for 30 seconds. Then quickly add the turkey, 1 tsp kosher salt, and ½ tsp pepper. Break up the turkey into small crumbles and cook for 1-2 minutes.
    • When the turkey is still pink, add in the onion and bell pepper. Cook all together, continuing to crumble up the turkey, for 2-4 minutes until veggies start to soften. Use a slotted spoon to transfer the whole mixture to a large bowl and set aside. There should be some liquid remaining in the pan - do NOT drain.
    • Turn the heat down to medium. To the same pan, add sweet potato, garlic powder, chicken broth, and 1 tsp salt. Cover with a lid and let cook for 4-5 minutes, quickly stirring halfway.
    • Remove the lid and let cook for another 2-3 minutes until dry and the sweet potatoes are tender. If they need more time, add another 1 tablespoon broth and cook covered until softened, repeating as needed.
    • Return the turkey and veggie mixture back in. Mix all together and season to taste. Finish with your choice of toppings and serve warm.

    Notes

    • To finish with eggs: Make 4 wells in the hash, crack eggs in, and cover with a lid to cook for 3-5 minutes or until cooked to your desired doneness. Alternatively, serve it with eggs on the side - hard-boiled, fried, scrambled, or poached eggs are all great!
