If I’m being honest, I’ll take a turkey and egg sandwich any day. However, there’s something extra special and completely irresistible about one made with Thanksgiving leftovers. Arguably better than the holiday meal itself, a good Thanksgiving sandwich is a satisfying meal I’m more than happy to eat for breakfast, lunch, and dinner on repeat! You can easily mix and match your favorite ingredients and toppings for a sandwich that’s truly unique. Plus, when you use leftovers, all you’ll have to do is cook up an egg. Recipes don’t get better or easier than that!

- Oven roasted turkey breast: To keep things simple, use a leftover turkey breast from Thanksgiving dinner. Both white and dark meat taste great.
- Eggs: Use the freshest eggs you have for the best taste. I prefer to use pasture-raised eggs for their extra nutrients and deep orange color.
- Cooking oil: I use avocado oil to cook, fry, and sauté with because of its high smoke point (500°F) and neutral flavor.
- Condiments: I’m partial to mayo and leftover cranberry sauce on my turkey egg sandwich. But use whatever spreads and sauces you like best, such as pesto sauce, mustard, ketchup, hummus, or gravy.
- Vegetables: Include whatever veggies you have in the fridge. Some of my favorite options include avocado, spinach, lettuce, tomato, kale, roasted red peppers, and cucumber.

STEP ONE: Toast the bread with or without cheese, if desired. I toasted mine in the air fryer at 325ºF for 3 minutes.
STEP TWO: Spread your chosen condiments onto the bread. Here I'm using leftover Apple Cranberry Compote and mayonnaise.
STEP THREE: Add your greens and slices of cheese.
STEP FOUR: Heat a non-stick skillet over medium heat, add a splash of oil, and cook the eggs to your desired doneness. While the eggs are cooking, warm the turkey in the same skillet.
STEP FIVE: Slide the eggs onto the sandwich and season with salt and pepper. Finally, add the turkey breast, close the sandwich, and enjoy!

- Toast the bread. This will help give the sandwich structure and keep it from becoming soggy. Just be careful not to let it burn!
- Layer with intention. Start by smearing sauces, condiments, and spreads on your bread. Then, add the heaviest ingredients like veggies and thick cheese. Top off your sandwich with thinner, lighter items like meat and seasonings. Storing: I recommend serving these sandwiches fresh for the best taste and texture, especially if you’re using a fried egg. However, if you want to prepare them in advance, you can cook the egg completely, wrap your sandwiches in plastic wrap, and store them in an airtight container in the fridge for up to 48 hours in advance.
Freezing: If you are planning on freezing your sandwich, I highly recommend leaving soft or watery condiments and toppings like mayo, tomatoes, jelly, etc. off until just before eating. Otherwise, they are likely to cause your bread to become soggy! Then, wrap your sandwiches in plastic wrap, and place them in the freezer for up to 3 months.
Reheating: For the best results, warm your leftover turkey and egg sandwich in a skillet over medium heat until it is heated through and the bread is crisp. Or, preheat the oven to 325ºF, place your sandwich on a foil-lined baking sheet, and heat it for 15-20 minutes or until the desired temperature has been reached.
